Teacher turned sommelier Paul emigrated from Australia to London to work for the Jamie Oliver Group where he was head sommelier at Fifteen and Barbecoa before being promoted to Group Head of Wine.
Matthew was sommelier at L’Escargot in Soho before joining Cubitt House Group where he was beverage manager. He managed all of the wine lists across 4 restaurants as well as designing and delivering bespoke, innovative wine training for the group’s staff.
Sarah joined WineEd after a spell as Sommelier at the multi-award winning Gidleigh Park. The wine list at Gidleigh is world renowned and the service standard is unparalleled.
